Charro Beans
Part 1: Cook the Pinto Beans
Ingredients
- 1 pound dried pinto beans
- 6 cups water
- 1/4 red onion
- 1 clove garlic
- 1/2 teaspoon salt
- 1 bay leaf
Directions
- Rinse beans remove any debris
- Add

- Bring to a boil, then reduce to a simmer.
- Cook until tender (~2 hours, check occasionally add more water to keep beans submersed)
- Drain beans, reserving the cooking liquid.
- Measure 2 1/2 cups total liquid using as much bean juice as possible
- Add 1 teaspoon chicken bouillon
Part 2: Make the Charro Beans
Ingredients
- 5 slices bacon
- 1 tube chrizo
- 1 8oz package hot italian sausage
- 1/2 onion (diced)
- 2 cloves garlic
- 1 can diced tomatoes
- 2 jalapeno (diced)
- 1 chipotle pepper in adobo
- 1/2 bunch cilantro (chopped)
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- 2 1/2 cups bean broth (from Part 1)
Directions
- Add bacon, sausage, and chorizo to pot over medium heat
- Cook ~5 minutes, until bacon is cooked.
- Add onion and garlic
- Cook until onion is translucent.
- Add

- Peppers
- Cilantro
- Oregano
- Paprika
- Cumin
- Pepper
- Cook for 5 minutes.
- Add cooked beans and reserved broth.
- Simmer 15 minutes.
- Taste and adjust seasoning with salt, pepper, or spices.
