Charro Beans

Part 1: Cook the Pinto Beans

Ingredients

  • 1 pound dried pinto beans
  • 6 cups water
  • 1/4 red onion
  • 1 clove garlic
  • 1/2 teaspoon salt
  • 1 bay leaf

Directions

  • Rinse beans remove any debris
  • Add
    • beans
    • garlic
    • onion
    • bay leaf
    • salt
    • water
  • Bring to a boil, then reduce to a simmer.
  • Cook until tender (~2 hours, check occasionally add more water to keep beans submersed)
  • Drain beans, reserving the cooking liquid.
  • Measure 2 1/2 cups total liquid using as much bean juice as possible
  • Add 1 teaspoon chicken bouillon

Part 2: Make the Charro Beans

Ingredients

  • 5 slices bacon
  • 1 tube chrizo
  • 1 8oz package hot italian sausage
  • 1/2 onion (diced)
  • 2 cloves garlic
  • 1 can diced tomatoes
  • 2 jalapeno (diced)
  • 1 chipotle pepper in adobo
  • 1/2 bunch cilantro (chopped)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 1/2 cups bean broth (from Part 1)

Directions

  • Add bacon, sausage, and chorizo to pot over medium heat
  • Cook ~5 minutes, until bacon is cooked.
  • Add onion and garlic
  • Cook until onion is translucent.
  • Add
    • Tomatoes
    • Peppers
    • Cilantro
    • Oregano
    • Paprika
    • Cumin
    • Pepper
  • Cook for 5 minutes.
  • Add cooked beans and reserved broth.
  • Simmer 15 minutes.
  • Taste and adjust seasoning with salt, pepper, or spices.
